Red Velvet Cake Balls

I did lots of research before I finally braved these! First, make a red velvet boxed cake mix according to directions.


I let it cool for about 15 minutes and then crumbled it.
I also added about 3/4 of a container of cream cheese icing.

Put the cake and icing mixture in the fridge for at least 2 hours. Then roll small scoops into balls.


Place in freezer for at least 6 hours.


I used white almond bark (the entire pack)

Here is what I think is the most difficult part...dipping the balls into the chocolate. There has to be some kind of secret or a special chocolate dipping tool. So...they aren't pretty, but they are tasty!

Chocolate Chip Bundt Cake

This is a yummy recipe my neighbor, Barb gave me. This is actually the second time I have made it. I did a few things different and it seems to have turned out much better...don't get me wrong, the first one was good, but it didn't look pretty and it wasn't as moist as I like my cakes. So far, this one came out of the pan easily, so it's pretty, and doesn't seem as dense, so I am hoping it is moist.

Ingredients, as you may notice, it is quite a bit of butter, so I found this link to help you if you are concerned, not sure of the "quality" of the website, but interesting...

One thing I didn't change was that I make the cake later in the evening. Not really sure why, but I know when I take it out to cool, it has been about 10pm or later each time. Last time I ended up going to bed and setting an alarm for 2 hours later to move the cake from the cooling rack to a covered cake plate.

Oreo Cheesecake Bites

Last time I made a cheesecake, it looked like an earthquake hit it, oh and I forgot the whipping cream, oops. It did still taste good, it just didn't look good! This time I tried a slightly easier recipe that I got through email. It was fairly easy and very delicious.
